Grandma Fran’s Homemade Healthy Granola

My friend, Fran from New Paltz, NY was visiting us in Florida last year. One morning she shared some granola that she had just made. My husband and I have been hooked ever since.

When we travel, we bring our own granola and when we share it, I’m asked for the recipe.

INGREDIENTS

8 cups Old Fashioned Oats

1 cup light brown sugar (we substitute granulated stevia)

1/3 cup water

4 tsp vanilla

1 tsp salt

1 cup unsweetened coconut

1 cup almonds

1 cup walnuts, cashews or sunflower seeds or any nuts you like

1 cup dried cranberries or raisins or other dried fruit

DIRECTIONS

Mix the nuts and oats

Put sugar in the water and microwave till it melts

Add the vanilla and salt then mix well into the oats and nuts mixture

Place on a flat cookie sheets – just pile it up

Cook at 275 degrees for 45 minutes

Remove from oven – return to the same large mixing bowl

Add coconut and dried fruit

Put into a gallon storage bag or whatever you want to use

SERVING SUGGESTIONS

My husband puts a cup of the granola in a bowl then he adds a 1/4 cup fat free natural yogurt, He adds about a 1/2 – 1 cup of berries/fruit (strawberries, blueberries, blackberries, pineapple, apple, bananas) whatever we have. He tops with shaved ginger and a couple generous sprinkles of cinnamon.

I eat mine just like this and my husbands likes to pour a little almond milk over his.

This is so delicious you will feel like you’re eating dessert, but it’s so good for you!
