Take very opportunity to add berries to yogurt, cereal, and pancakes. You can also make smoothies loaded with berries, or for special occasions make cobber. Here are a few berry recipes (using one type of berries or combos) to try:
Quick & Easy Berry Cobbler
4 Cups fresh blackberries, blueberries, strawberries, raspberries, or cranberries
1 Egg
1 Cup honey or sugar (or a little less, if you prefer)
1 Cup of flour
6 Tablespoons of melted butter
Preheat over to 375 degrees.
Place berries in a lightly greased 8×8 inch dish (or equivalent)
Stir together egg, sugar, and flour in a medium bowl,stir until mixed
Srinkle mix over fruit, and then drizzle with butter
Bake at 375 degrees until brown and bubbly, about 35 minutes
Let stand for 10 minutes
Optional: serve with whipped cream, yoghurt, or a small scoop of ice cream.
Oats & Berry Bake
2 Cups uncooked oats (opt for a healthier one)
½ Cup low-fat milk
3 Cups berries (black, blue, strawberry, cherry, or a combo)
¼ Cup brown sugar
2 tsp. cornstarch
Optional: 1 tsp. cinnamon, orange or lemon zest
- Preheat over to 350 degrees
- Stir together milk and granola, let stand 5 minutes
- Toss together berries, sugar, cornstarch, cinnamon
- Put berry mix in baking dish and spoon over granola/milk
- Bake 1 hour or until it’s bubbly hot
- Let cool and serve with ½ cup yoghurt
Berry Smoothie
1 Cup fresh or frozen berries (blueberry, blackberry, strawberry, raspberry, cranberries)
1 Small banana (sliced, pre-frozen)
1 Cup almond, rice, or low-fat milk
½ Cup yoghurt (nonfat, no sugar)
2 Cups ice cubes
Pulse on “ice breaker” and then blend until smooth.
