Grandma Fran’s Homemade Healthy Granola aka Magic Granola (that’s what our two youngest grandgirls call it)
My friend, Fran from New Paltz, NY was visiting us in Florida last year. One morning she shared some granola that she had just made. My husband and I have been hooked ever since.
When we travel, we bring our own granola and when we share it, I’m asked for the recipe.

INGREDIENTS
8 cups Old Fashioned Oats
1 cup granulated stevia The original recipe calls for sugar, but we all know how bad sugar is for us so we substitute with stevia). Some folks don’t sweeten it at all.
2/3 cup water
2 tbs vanilla
1 tsp salt
1 cup unsweetened coconut
1/2 cup almonds, 1/2 cup walnuts, cashews or sunflower seeds, or any nuts you like (the more the merrier and healthier)
1 cup dried cranberries or raisins or other dried fruit
DIRECTIONS
To make this super easy, I use an aluminum foil baking pan to mix, bake and store
Mix together the coconut, nuts, and oats
Springle in Stevia
Add the vanilla and salt to the water and mix well into the oats and nuts mixture
Cook at 275 degrees for 45 minutes
Remove from oven
Add dried fruit – Mix well
Cover and store or put into storage bags for sharing and easy access
SERVING SUGGESTIONS
My husband puts 1/2 cup of granola in a bowl then he adds a 1/4 cup fat-free natural yogurt, He adds about a 1/2 – 1 cup of berries/fruit (strawberries, blueberries, blackberries, pineapple, apple, bananas) whatever we have. He tops with shaved fresh ginger and a couple of generous sprinkles of cinnamon.
He then pours in a little almond milk
This is so delicious you will feel like you’re eating dessert, but it’s so good for you!
